Okay, I had two malingerer bananas--that were too mushy--in the bowl on my counter. I didn't want to heat up the oven, and I didn't want to make "regular" banana muffins or bread. So I opted for air fryer cocoa-banana muffins with a bit of oatmeal in them so I could pretend the muffins were "healthy." Well they are. Sort of. The muffins also are really, really good. The bananas keep the muffins moist and sweet without the need for a lot of fat and sugar, and the oatmeal contributes great texture and softness to the muffins as well as nutrition. Yes, you can add chocolate chips to the muffin batter, but I was trying to be "healthy" and left them out. I bake the muffins in ramekins in the air fryer to help the muffins hold their shape, but the ramekins aren't necessary if you don't have them. Just use a double thickness of muffin/cupcake liners to hold the batter. The muffins cook in the air fryer in 13-15 minutes and come out fragrant with chocolate and bananas. The sugar on top provides a slight crunch. Try the muffins with a big glass of milk or a cup of tea or coffee. Enjoy!
Air Fryer Cocoa-Banana Muffins -- Makes 8
2 very, very ripe (mushy) bananas
1/4 cup of canola oil
1 large egg
1/4 cup of dark brown sugar
1/4 cup of sugar
1/4 cup of cocoa powder
1 cup of flour
1/4 teaspoon of baking soda
1/4 teaspoon of salt
3/4 teaspoon of baking powder
1/4 cup of quick oats
Sugar for sprinkling
Mash the bananas with a spoon in a medium/large bowl. Whisk in the oil, egg, sugars, and cocoa powder well. Stir in the flour, baking soda, salt, baking powder, and quick oats until blended. Line eight ramekins with cupcake/muffin liners and spritz the liners with non-stick cooking spray (if you only have four ramekins, just reuse the ramekins after making the first batch of muffins). Divide the the muffin batter among the lined ramekins and sprinkle the tops of the muffins with a little sugar, pressing the sugar into the batter just a bit with your fingers (so it doesn't fly around in the air fryer). Put four batter-filled ramekins in your air fryer basket, put the basket in the air fryer, and air fry the muffins at 320 degrees for 13-15 minutes or until a pick inserted in a muffin comes out with no wet batter attached. Carefully tip the muffins out of the ramekins to cool completely. Repeat the cooking process with the remaining batter.
