If you have dark, spotted, or mushy bananas to use, you're in luck! You can make these mini Air Fryer Butterscotch Banana Breads. The little loaves are sweet, moist, and full of banana and butterscotch flavor. Dark brown sugar and butterscotch morsels provide the caramel flavor to the breads, and bananas provide moisture as well as taste. To give the breads a bit of "whole-grain goodness," I include a small amount of quick oats in the batter. The oats also soak up some of the moisture and improve the texture of the breads. The breads make a nice breakfast treat, and they also are great for dessert, snacks, and tea time. Enjoy!
Air Fryer Banana Butterscotch Breads -- Makes 4 Mini Loaves
2/3 cup of milk
1/3 cup of canola oil
1 large egg
1/2 cup of dark brown sugar
2 medium-large bananas, mashed (about a cup or 1 1/4 cups)
1 cup of flour
1 1/2 teaspoons of baking powder
1/4 teaspoon of salt
1/2 cup of quick oats
1/4 cup of chopped walnuts
1/2 cup of butterscotch morsels
Spritz four mini loaf pans well with non-stick cooking spray. In a large bowl, whisk together well the milk, oil, egg, and brown sugar. Whisk or beat in the bananas. With a spoon, mix in the flour, baking powder, and salt until just combined. Stir in the oats, walnuts, and butterscotch morsels. Divide the batter among the four pans. Put two filled pans into your air fryer basket, put the basket in the air fryer, and air fry the breads at 320 degrees for 15-20 minutes or until golden brown and a pick inserted in the center of a loaf comes out with no wet batter attached. Repeat the cooking process with the remaining batter. Let the breads cool in their pans for 5-10 minutes before removing them to cool completely.
