These little crustless quiches are great for a special breakfast, brunch, or even a light dinner with a salad. The quiches require few ingredients, but they taste incredibly good. Leeks are a little different from what you find in most breakfast bakes, and their distinctive, onion-like flavor complements the tangy goat cheese in the quiches. I wash and cook leeks and onions ahead of time to use in soups and sauces as well as in the quiches. To do that, you simply saute the leeks and onions in a little canola or olive oil for about 15 minutes or until they soften. Use two well-washed and chopped leeks and a chopped onion, and you'll have plenty for the quiches and for a small pot of soup. Leeks are quite good, if you've never tried them, and are worth seeking out. Most markets carry leeks. They look like giant green onions. If you can't find leeks or don't want to use them, try green onions in the recipe instead. The taste of the quiches will be different but good, nonetheless. The quiches take minutes to mix up and air fry in 15-20 minutes. You can make the quiches ahead and reheat them if you'd like. Enjoy!
Air Fryer Goat Cheese and Leek Quiches -- Makes 4 Mini Quiches
1 cup of cooked leeks and onions (about 1/4 cup onion and 3/4 cup of cooked leeks)
2 ounces of crumbled goat cheese (half of a 4-ounce package)
1 cup of milk
3 large eggs
1 tablespoon of grated Parmesan cheese
1/4 teaspoon of pepper
Salt to taste if you want (I don't use it, because the cheese has enough salt for us)
1/4 teaspoon of dried thyme
Spritz 4 mini pie tins with non-stick cooking spray. Divide the leeks and onions among the pie tins, placing the leeks and onions in the bottom of the tins. Sprinkle the goat cheese evenly on top of the leeks and onions in each tin. In a medium bowl or measure whisk the milk, eggs, Parmesan cheese, pepper, salt, and thyme well. Divide the mixture evenly among the tins, pouring it over the leeks and and onions. Depending on the size of your air fryer basket, put 2-4 tins in the basket, put the basket into the air fryer, and air fry the quiches at 320 degrees for 15-20 minutes or until lightly browned. Remove the quiches from the air fryer basket to cool and repeat the cooking process with the remaining quiches, if necessary. To serve the quiches, let them cool a few minutes, then run a plastic knife around the edges of each pie tin. Flip the quiches out onto plates, then turn them browned-side up to serve them.
