These are good, simple, and quick to make. The scones are soft in the centers and a bit crispy on the outsides. They are studded with bright, sweet-tart dried mango pieces and spicy-sweet bits of crystallized ginger. The scones don't include a huge amount of sugar and get their sweetness from the mango and ginger pieces. I often make the scones for a dinner/after dinner treat, and we eat the leftover scones for breakfast later in the week. The scones, of course, also are great with coffee or tea. Although I like to make the scones in the air fryer to save electricity and avoid heating up my kitchen on hot days, the scones will bake nicely in the regular oven. Just bake them at 400 degrees for about 20 minutes or until they are golden brown. Enjoy!
Sourdough Mango-Ginger Scones -- Makes 8
1 cup of all-purpose flour
2 tablespoons of sugar
2 teaspoons of baking powder
1/2 teaspoon of salt
4 tablespoons of butter
2 tablespoons of canola oil
1 cup of sourdough discard/starter
3-4 tablespoons of chopped candied/crystallized ginger
1/2 cup of chopped, dried mango pieces
1-2 teaspoons of milk
Extra sugar for sprinkling
Cut small pieces of baking parchment to fit your air fryer basket. In a large bowl combine the flour, sugar, baking powder, and salt. Cut in the butter with a fork or pastry blender until small floury bits form. Drizzle in the canola oil and cut it into the flour, too. The mixture may start to "ball up," but don't worry. Stir in the sourdough discard/starter, the ginger, and mango pieces until a soft dough forms. Drop 1/4 cup mounds (approximately) of dough onto the prepared parchment sheets, spacing the mounds at least an inch apart. With damp hands, you can shape up the mounds into smallish disks, if you'd like (or don't bother). Drizzle the tops of the mounds with a little milk and then sprinkle on a bit of sugar. Put one dough-topped piece of parchment in your air fryer basket, put the basket in the air fryer, and air fry the scones at 350 degrees for 12-15 minutes or until a deep, golden brown. Remove the scones from the air fryer and repeat the cooking process with the remaining dough.
