Use Your Discard in Sourdough Oatmeal Raisin Cookies

I didn't think I'd really like these cookies--I made them more for my husband--but then I found them addictive. The cookies are soft, have a slight sourdough tang, and are studded with juicy raisins. They are sweet but not cloyingly so. The cookies are just right for a snack or simple dessert, and they are also great alongside fruit or ice cream. I bake the cookies in the air fryer as well as the oven, and I actually prefer them made in the air fryer. The cookies brown better in the air fryer. I also can make a small number of cookies in the air fryer and stash the remainder of the dough in the refrigerator for another day. The ability to make a small number of cookies limits my temptation. The cookies really are good! Try them with a cup of tea or a glass of milk! Enjoy!

Sourdough Oatmeal Raisin Cookies -- Makes 12-15


1 cup of sourdough starter/discard

1/3 cup of canola oil

1 large egg

1/2 cup of dark brown sugar

1/4 cup of sugar

3 tablespoons of melted butter, cooled a little

1/2 cup of white whole-wheat flour (or regular whole wheat)

1/4 teaspoon of baking soda

1/2 teaspoon of baking powder

1 cup of quick oats

1/2 teaspoon of salt

1/2 teaspoon of pumpkin pie spice

1/2 teaspoon of grated orange zest (optional, but good)

1/2 cup of raisins


In a large bowl, beat together well the starter/discard, oil, egg, sugars, and butter. Stir in the white whole-wheat flour, the baking soda, baking powder, oats, salt, pumpkin pie spice, and orange zest until combined. Stir in the raisins. Line a baking sheet with parchment paper or cut small pieces of parchment to fit your air fryer basket. Drop 1 1/2 tablespoon portions of dough onto the parchment paper, spacing the dough about 1 1/2 - 2 inches apart. Preheat the conventional oven to 350 degrees and then bake the cookies for about 15 minutes or until golden. Let the cookies cool on the baking sheet for a few minutes before removing them. For the air fryer, put a dough-topped piece of parchment into your air fryer basket, put the basket in the air fryer, and air fry the cookies at 320 degrees for 10-13 minutes or until golden brown. Remove the cookies from the air fryer basket to cool and repeat the cooking process with the remaining dough.
