If you like soft, poofy cookies with a slightly crunchy edge, these are the cookies for you! The cookies take minutes to mix up and cook in 10 minutes in the air fryer. The cookies are soft, almost cake-like in the centers, and full of almond flavor. Only moderately sweet, the cookies make great tea-time treats and accompaniments to fruit and ice cream. You can use almond meal or flour to make the cookies or grind your own almonds in the food processor to make the meal/flour, if you prefer. The almond flour helps keep the cookies moist as well as adding flavor. The cookies include no butter, so, if you're avoiding dairy, the cookies are great to have on hand for a nice treat. Enjoy!
Air Fryer No Butter Almond Cookies -- Makes 8-9 Cookies
1 large egg
2 tablespoons of sugar
1/4 cup of dark brown sugar
3 tablespoons of canola oil
1 tablespoon of water
1/2 teaspoon of vanilla
1/4 teaspoon of almond extract
3/4 cup of almond meal/flour/or ground almonds
1/2 cup of all-purpose flour
1/4 teaspoon of salt
1/4 teaspoon of baking powder
1/4 teaspoon of baking soda
1/4 teaspoon of cinnamon
Sugar to sprinkle
In a medium bowl or measure combine the egg, sugars, oil, water, and extracts and beat them together well. Stir in the almond meal/flour/ground almonds, flour, salt, baking powder, baking soda, and cinnamon until combined. Cut small pieces of baking parchment to fit your air fryer basket. Drop 1 1/2 tablespoon scoops of dough, 2-3 to a sheet, on each piece of parchment paper, spacing the dough mounds as far apart as possible (the cookies will puff up and spread a bit). Sprinkle the dough mounds with a little sugar, if you'd like. Put one dough-topped piece of parchment in your air fryer basket, put the basket in the air fryer, and air fry the cookies at 320 degrees for about 10 minutes or until puffed and just set. Remove the cookies from the air fryer basket to cool and repeat the cooking process with the remaining dough.
