Use Your Air Fryer to Make Quick Mini Breakfast Bakes

You can make individual breakfast bakes--little quiche-like things--in less than half an hour using your air fryer. The recipe I'm posting today is simple and turns out little mini bakes that are savory, cheesy, and incredibly good. I use cheddar cheese in the bakes, but you can vary the cheese to what you have on hand. I also use bacon crumbles for smokey, salty flavor. The pre-cooked crumbles from the bags work just fine! These little bakes can be made ahead and reheated for an even faster breakfast on weekdays. Or try the bakes for a special weekend treat. Need a quick, easy dinner? These bakes make a nice, light supper with a salad and/or soup. Enjoy!

Air Fryer Breakfast Bakes -- Makes 4


1 cup of fresh bread crumbs (from 2-3 rolls or pieces of bread--stale bread is fine)

4 teaspoons of bacon crumbles

4 tablespoons of sharp cheddar cheese

2 teaspoons of minced dried onions

1 cup of milk

3 large eggs

1-2 teaspoons of Dijon mustard

1/8 teaspoon pepper

1/8 teaspoon of salt

1 green onion, chopped


Spritz 4 mini pie tins or ramekins with non-stick cooking spray. Divide the bread crumbs, bacon crumbles, cheese, and onions among the 4 tins. In a medium bowl or measure whisk together well the milk, eggs, Dijon, pepper, and salt. Pour the mixture evenly over the ingredients in each tin. Sprinkle the green onion evenly over the mixture in each tin. Put 2-4 tins (depending on how many will fit) in your air fryer basket (first, put a sheet of baking parchment or foil in the bottom of the basket to catch any spills/drips). Put the filled basket in the air fryer and air fry the mini bakes at 320 degrees for about 20 minutes or until puffed and golden brown. Remove the cooked bakes to cool and repeat the cooking process with the remaining tins of uncooked mixture, if necessary. Let the cooked bakes cool a few minutes in their tins, then loosen the edges and flip the bakes out onto plates to serve them.
