You can cook a savory pork tenderloin in your air fryer in about 15 minutes. The tenderloin comes out of the air fryer with a nicely browned crust and is tender and juicy inside (assuming you don't overcook it!). The topping for the mild pork is a mixture of grainy mustard, olive oil, yogurt, and a few spices. The mustard mixture adds extra flavor to the pork without overwhelming it, and you can use any accumulated juices on top of potatoes, rice, or whatever you like. I especially like the pork dish because it's easy to make, and cleanup is minimal. Plus it tastes really, really good, including in leftover form. Enjoy!
Air Fryer Pork Tenderloin With Mustard Topping -- Serves 4+
16-20 ounce pork tenderloin
2 tablespoons of grainy mustard
2 tablespoons of olive oil
2 tablespoons of plain Greek or regular yogurt (non-fat is fine)
1/4 teaspoon of dried thyme
1/4 teaspoon of pepper
1/4 - 1/2 teaspoon of salt (depending on how salty you want your meat)
1/4 teaspoon of onion powder
Cut cut a piece of aluminum foil to fit in your air fryer basket and an inch or two up the sides of the basket (so you can lift the pork out later). You may want to double the aluminum foil if you're worried about leaks and want less cleanup. Spritz the foil with non-stick cooking spray. Pat the pork dry with a paper towel, remove the silverskin with a sharp knife (the white stuff on the pork that looks like a membrane--just slide a sharp knife under it and cut with a jigsaw motion, pulling to remove the silverskin, or most of it). If you don't want to remove the silverskin, life will go on, regardless. Cut the pork tenderloin, crosswise, into three or four pieces, to fit in your air fryer basket. In a small bowl or cup combine well the mustard, olive oil, yogurt, thyme, pepper, salt, and onion powder. Slather one side of the pork tenderloin pieces with half of the mixture, then turn the pork pieces over and slather the other side with the remainder of the mustard mixture. Put your pork-filled air fryer basket in the air fryer and air fry the pork tenderloins at 360 degrees for 10-15 minutes or until a meat thermometer inserted in the center of a tenderloin piece indicates the pork has reached an internal temperature of 140 degrees. Do not overcook the pork, or it will be tough! Remove the tenderloin pieces from the air fryer basket and let them sit for 5-10 minutes. You can cover them loosely with a piece of aluminum foil if you're worried the pork will cool too much, but let the pork "rest." Slice the pork tenderloin pieces, crosswise, into slices to serve them.
