These little biscuits are great treats for a weekend breakfast or just to enjoy with a cup of coffee or tea. The biscuits are easy to make in one bowl, and you can mix them up in minutes. Soft, slightly sweet, and with a slight zing from crystallized ginger, the biscuits are a little different from the usual breakfast fare. The orange flavor is mild and complements the spicy-sweet ginger. If you don't have or don't want to use crystallized ginger in the biscuits, it's okay. You can just leave it out or try substituting raisins, which will give a different flavor and sweetness but still be good. Enjoy!
Air Fryer Ginger-Orange Biscuits -- Makes 8 Small Biscuits
1 cup of flour
1/4 cup of sugar
1/4 teaspoon of salt
1 teaspoon of baking powder
1/2 teaspoon of ground ginger
2 tablespoons of butter, cut into small pieces
2 tablespoons of canola oil
1 teaspoon of grated orange zest
1/4 cup of milk
3 tablespoons of chopped, crystallized ginger
Extra sugar to sprinkle
In medium bowl or measure combine the flour, sugar, salt, baking powder, and ground ginger. Cut in the butter with a fork until smallish pieces form. Drizzle in the canola oil and use the fork to toss/mash it into the flour mixture. With a spoon stir in the orange zest, milk, and crystallized ginger until blended and a soft, wet dough forms. Cut small pieces of baking parchment to fit your air fryer basket. Drop small, 1 1/2 tablespoon scoops of dough onto the parchment pieces, leaving an inch or so between the dough mounds. With damp hands shape the dough into rounds about an inch thick. Sprinkle the tops of the dough rounds with a little sugar. Put one dough-topped piece of parchment into your air fryer basket, put the basket into the air fryer, and air fry the biscuits at 350 degrees for 10-15 minutes until golden brown. Remove the biscuits to cool and repeat the cooking process with the remaining dough.
