These little breads or muffins--you can make either or both from the recipe--are incredibly good and easy! The breads/muffins are moist, a little sweet, and filled with "good for you" carrots as well as a bit of whole-wheat flour and even some oatmeal. Chopped preserved ginger--either crystallized or uncrystallized--gives the breads/muffins some extra zing. I like the breads/muffins for breakfast, warmed a bit in the air fryer. They also make great snacks alongside a cup of tea, coffee, or milk. Need a quick dessert that's not too sweet? Serve a slice of the breads or a muffin with a scoop of vanilla ice cream and some pear slices. You'll have a tasty, elegant end to your meal. Enjoy!
Air Fryer Carrot-Ginger Breads or Muffins -- Makes 4 Mini Loaves or 8 Muffins
1/2 cup of canola oil
1 large egg
1/4 cup of sugar
1/4 cup of dark brown sugar
1/2 teaspoon of salt
1/4 cup of orange juice
1/4 cup of buttermilk or milk
1/2 cup of whole-wheat flour
3/4 cup of all-purpose flour
1/4 cup of quick oats
1 teaspoon of baking powder
1/4 teaspoon of baking soda
1 teaspoon of cinnamon
1/4 teaspoon of nutmeg
1/2 teaspoon of ginger
1 cup of grated or shredded carrots
1/4 cup of chopped crystallized or uncrystallized ginger
In a medium bowl whisk together well the oil, egg, sugars, salt, orange juice, and buttermilk. Stir in the flours, oats, baking powder, baking soda, and spices until barely combined. Stir in the carrots and ginger until thoroughly incorporated. Spritz 4 mini loaf pans or 8 muffin cups or ramekins with non-stick cooking spray. Divide the batter among the pans/cups. Put 2-4 pans or cups in your air fryer basket (depending on the size of your air fryer basket), put the basket in the air fryer and air fry the breads/muffins at 320 degrees for 15-22 minutes (the breads take a little less time than the muffins) or until a pick inserted in the center of a bread/muffin comes out with no wet batter attached. Remove the breads/muffins from the air fryer basket and repeat the cooking process with the remaining batter. Let the breads/muffins cool in their pans for a few minutes before turning them out to cool completely.
