This is a five minute (or less) to prepare fish recipe. You pop it into the air fryer and it cooks in about 12 minutes. The fish is moist and flaky. The crispy onion topping gives you great onion flavor and the crunch experience of "fried" fish without the frying. The topping really is crispy, especially if you use the air fryer to cook the fish. If you'd prefer, you can also bake the tilapia--just give it about 15 minutes at 375 degrees in the regular oven. Yes, you can use the same type of French-fried onions you use for green bean casserole at Thanksgiving. Or, you can go to an Asian market and buy large bags of fried onions for far less money (look in the Indian foods section). That's what I do. The fried onions also make a great topping for rice dishes and burgers!
Air Fryer Crispy Onion Tilapia -- Serves 2
2 tilapia fillets (about 3/4 pound)
1 tablespoon of low-fat mayonnaise
1 tablespoon of fat-free plain yogurt
1 teaspoon of lemon juice
1/4 teaspoon of lemon pepper
1/2-3/4 cup of French-fried onions
Pat the tilapia dry with a paper towel and spritz a piece of aluminum foil cut just large enough to fit inside your air fryer basket (so that it extends up only about an inch) with non-stick cooking spray. Lay the tilapia on the foil. In a cup, stir together the mayonnaise, yogurt, lemon juice, and lemon pepper until smooth. Spread the mixture on the fish. Crush the French-fried onions until you have some small and some largish (1/2-inch or so) pieces. Press them into the topping mixture on the fish. Air fry the fish for about 12 minutes or until it flakes with a fork and the onions are dark golden brown, or bake the fish at 375 degrees in the regular oven for about 15 minutes. Let the fish cool a few minutes before serving it.
