Sometimes you need something easy and quick that tastes good and that everyone will like. These Air Fryer Coffee Cakes will do the trick. They take minutes to prepare and bake in 10-15 minutes in the air fryer. The coffee cakes are great for dessert, warm, with ice cream oozing around them. They're also good, warm or at room temperature, for a special breakfast treat. The coffee cakes use convenience items, yes, but occasionally that's not a bad thing (no judging!) when you're pressed for time or just don't want to bother with getting fancy/making something from scratch. In this case, you'll need a can/tube of four large biscuits (or use a can of eight biscuits and cook the other four for dinner/breakfast) and a can of apple pie filling as well as a few other ingredients. You'll also need four mini pie tins, or you can use ramekins or baking cups. Really, the recipe is quick, easy, cheap, and delicious. As the little coffee cakes bake and you smell the incredible aroma, you'll be hooked. And what if you don't have apple pie filling? Feel free to substitute one you do have--cherry, blueberry, peach, for example. They'll be great, too!
Air Fryer Apple Coffee Cakes -- Makes 4
1 can of 4 large or "grand" size biscuits (or use a tube of 8 and make the remainder for dinner)
1 can of apple pie filling
2 tablespoons of dark brown sugar
1 tablespoon of sugar
2 tablespoons of flour
2 tablespoons of oats (quick or regular)
2 tablespoons of melted butter
1/2 teaspoon of cinnamon
Press each of the four biscuits into a mini pie tin, flattening it to fit the bottom of the tin and just a bit--maybe 1/4-1/2-inch--up the sides. Divide the can of apple pie filling among the pie tins, spooning it on top of the biscuits. In a small bowl or measure (I use a 2-cup Pyrex measure) mix the sugars, flour, oats, melted butter and cinnamon together until you have a crumbly mixture. Sprinkle one-quarter of the crumbly mixture on top of each of the apple-filled tins. Spritz the top of the crumbly mixture with a little non-stick cooking spray. Place one or two mini-coffee cakes in your air fryer (depending on how big an air fryer you have) and cook them at 320 degrees for 10-15 minutes or until they are puffed and golden brown. Repeat the process with the remaining coffee cakes. Let the coffee cakes cool a few minutes before removing them carefully from the tins (run a plastic knife around the edges, then insert the knife carefully underneath each cake and lift it out). Serve the little coffee cakes warm with ice cream. Yumm!
