Quick, Easy, and Inexpensive Breakfast: Air Fryer Cottage Cheese and Quinoa Muffin Bites (Diabetic Friendly)

These muffin bites are simple to make and are loaded with protein and flavor. They also are good because they don't require a lot of expensive eggs to make! Instead of a lot of eggs you'll need about a cup of cooked quinoa--I use leftover quinoa, which works just fine--one egg, a little cottage cheese, and some cheese. I usually opt for thick cut mild shredded cheddar cheese, but you can use whatever cheese you have on hand and like--Colby-Jack and Swiss cheese work especially well. The combination of protein, fiber, and fat in the muffin bites will help keep you full, and, if you're diabetic or want to "eat healthy," the bites are a great breakfast option. The recipe makes six muffin bites, and I usually tuck some of them in the refrigerator to reheat in the microwave later in the week for an almost instant breakfast (reheat a couple of muffin bites in the microwave at 50 percent power for a minute or two). We like the muffin bites with a little ham alongside and our usual fruit and yogurt. Enjoy!

Air Fryer Cottage Cheese and Quinoa Muffin Bites (Diabetic Friendly) -- Makes 6


3/4 - 1 cup of cooked quinoa (regular, tri-color, etc.)

1 tablespoon of grated Parmesan cheese

1/2 cup of cottage cheese (low-fat is fine)

1 large egg

1/3 cup of shredded cheese (I use thick-cut, mild cheddar)

1/8 teaspoon of salt, optional (I don't add it, as the cottage cheese is salty enough)


Spritz 6 muffin cups with non-stick cooking spray. In a large bowl mix together well the quinoa, grated Parmesan, cottage cheese, and salt, if you're using it. Stir in the shredded cheese until combined. Divide the mixture among the muffin cups. Air fry the muffin bites at 320 degrees for 15-20 minutes or until set and golden brown. Let the muffin bites cool in their cups for a few minutes before turning them out.
