Quick Cookies From Your Air Fryer: Brown Sugar Shortbread

Need a quick, easy dessert? Use your air fryer to make simple brown sugar shortbread. The dough for the little cookies takes minutes to mix up, then you simply press the dough into a small cake pan, score the dough, and pop the pan in the air fryer. You'll have fresh, hot shortbread cookies in about 20 minutes. The cookies are dense, sweet, and just a bit crumbly--as shortbread should be. The cookies are great alone with tea or coffee, and the cookies make great accompaniments to fruit or ice cream. Enjoy!

Air Fryer Brown Sugar Shortbread -- Makes 8 small cookies


2 tablespoons of melted butter

2 tablespoons of canola oil

1 tablespoon of milk

1/2 teaspoon of vanilla extract

1/4 cup of dark brown sugar

1 cup of flour

1/8 teaspoon of salt

1/8 teaspoon of baking soda


Spritz a six-inch round cake pan with non-stick cooking spray. In a medium bowl or measure, combine the butter, oil, milk, vanilla, and sugar and beat them well. Stir in the flour, salt, and baking soda until combined. Press the mixture into the prepared cake pan, pressing the dough into to bottom of the pan and about one-half inch up the sides of the pan. With a sharp knife or fork, score the dough into eight triangles. You also can score the dough around the edges of the pan and/or make other designs in dough if you're so inclined. Put the pan of dough in the air fryer basket, put the basket in the air fryer, and air fry the dough at 280 degrees for 20-25 minutes or until a deep golden brown. Remove the cake pan from the basket and re-score the dough triangles. Let the shortbread cool for five to 10 minutes before separating the triangles and removing the shortbread from the pan to cool completely or eat.
