The reason this recipe is named "Unstuffed Tilapia" is because it uses stuffing mix on top of the fish for a crispy, crunchy coating. The tilapia can be ready in about 15 minutes, and it's good--really good. My husband, who's not much of a fish eater, likes this recipe. I use cornbread stuffing (the kind from a box) for the crumbs, but you could also use chicken or turkey stuffing mix. The fish comes out moist, well flavored, and the topping is nice and crunchy. Try the tilapia with rice, which cooks in about the same amount of time as the fish, and a green vegetable for a great low-fuss, fast meal. Enjoy!
Air Fryer Unstuffed Tilapia -- Serves 2-4
12-16 ounces of tilapia fillets
2 tablespoons of plain yogurt (fat free is fine)
1 tablespoon of light mayonnaise
1 teaspoon of Dijon mustard
2 tablespoons of chopped green onions
1/2 cup of cornbread stuffing mix crumbs
Spritz with non-stick cooking spray a piece of aluminum foil large enough to fit in your air fryer basket and a couple of inches up the sides. Pat the fish dry with paper towels, cut each piece in half vertically, up the dark middle line of the fish. Lay the fish on the foil and put the fish-topped foil in the air fryer basket. In a small bowl, mix the yogurt, mayonnaise, mustard, and green onions well. Coat the top of the fish with the mixture. Sprinkle the crumbs over the yogurt-mayonnaise mixture, pressing the crumbs into the mixture a little. Spritz the crumbs lightly with non-stick cooking spray or oil. Put the fish-filled air fryer basket in the air fryer and air fry the fish at 360 degrees for 10-15 minutes or until the fish flakes with a fork and the crumbs are a deep golden brown.
