These muffins take minutes to mix together and "bake" in the air fryer in about 20 minutes. Why goji berries? I had them on hand, and my husband likes them. Plus, goji berries are a good-for-you "superfood." I have to admit, the goji berries haven't exactly changed my life, but they are tasty in muffins and in your oatmeal. If you don't have any, just substitute dried cranberries. I line small ramekins with cupcake/muffin liners, which helps the muffins keep their shape in the air fryer. You can also use a double thickness of muffin liners, which will help keep the muffins from spreading too much. The muffins come out of the air fryer with a high rise. They are soft, slightly sweet, and wonderful with breakfast, dinner, or for snacks with tea and coffee. Enjoy!
Air Fryer Goji Berry Muffins -- Makes about 8
1/3 cup of sugar
1 large egg
1/4 cup of canola oil
1/2 teaspoon of vanilla
1/2 cup of milk
1 cup of self-rising flour
1/2 teaspoon of cinnamon
1/4 cup of dried Goji berries
Sugar to dust (optional)
In a medium bowl, whisk together well the sugar, egg, canola oil, vanilla, and milk. Stir in the self-rising flour and cinnamon until just mixed in (don't over mix). Stir in the Goji berries. Line ramekins with cupcake/muffin liners and spritz the liners with non-stick cooking spray. Divide the batter among the lined ramekins. Sprinkle the batter with a little sugar or raw sugar if you'd like. Put 3-4 filled ramekins in your air fryer basket, put the basket in the air fryer, and air fry the muffins at 320 degrees for about 20 minutes or until puffed and golden and a pick inserted in a muffin comes out with no wet crumbs attached. Remove the ramekins from the air fryer basket and let them cool a few minutes before removing the muffins from them to cool completely. Repeat the cooking process with the remaining muffin batter.
