These cookies may sound weird, but they're good. Think of a crinkle-topped sugar cookie with an attitude and lots of flavor, and you've got the idea. The cookies are simple to make, soft on the inside and crunchy on the outside, and they cook in about 10 minutes in your air fryer. I bake some of the dough and stash the remainder in the refrigerator for another day when I want fresh, hot cookies. The barley flour gives the cookies a deeper flavor as well as making them darker than wheat flour cookies in color. The barley cookies have the grated zest of an orange, which gives them a lot of citrus flavor. If you're not an orange lover, feel free to reduce or eliminate the orange zest. A little cinnamon complements the orange and barley flavors. The cookies are great on their own or alongside fruit or ice cream. Enjoy!
Air Fryer Cinnamon-Orange Barley Cookies -- Makes 12+
3 tablespoons of melted butter
3 tablespoons of canola oil
1/2 cup of dark brown sugar
1/4 cup of sugar, plus extra to sprinkle
1 large egg
1/4 teaspoon of salt
1/2 teaspoon of vanilla
1 1/2 cups of barley flour
1/2 teaspoon of baking soda
1/2 teaspoon of cinnamon
Grated zest of an orange
In a medium bowl or measure mix together well the butter, oil, sugars, egg, salt, and vanilla. Stir in the barley flour, baking soda, cinnamon, and orange zest until combined. Cut pieces of baking parchment large enough to fit in your air fryer basket. Drop several 1 1/2 tablespoon scoops of dough onto each parchment sheet, spacing the dough mounds at least 1 1/2 inches apart. Flatten the dough mounds a little with your fingers. Sprinkle the tops with a bit sugar, if you'd like. Put one dough-covered piece of parchment in your air fryer basket, put the basket in the air fryer, and cook the dough at 320 degrees for 8-10 minutes or until the cookies are just barely firm. The dough may look a little under done, but it will firm up on standing. Remove the cookies on their parchment sheet from the air fryer basket, place the cookies aside to cool, and place another dough-covered piece of parchment into the air fryer basket. Repeat the cooking process until you have as many cookies as you need/want. Wrap any unused dough well in plastic wrap and refrigerate the dough to bake later in the week.
