Yes, these little quiches are made with oatmeal and no fatty lard- or butter-laden crust. The quiches also have plenty of protein included in them and will keep you fueled for hours. The recipe I'm posting makes two little quiches, which cook in about 12 minutes, depending on your air fryer. How do they taste? They're really good--a nice savory breakfast treat that's quick enough for a Friday morning but special enough for the weekends, too.
Air Fryer Oatmeal-Cheese Quiches -- Makes 2
2 eggs
1/2 cup of low-fat cottage cheese
1/2 teaspoon of onion powder
1/2 teaspoon of dried dill
1/4 cup of quick oats
4 tablespoons of cheddar or Colby-Jack cheese, divided
In a medium bowl or measure (I use a 2-4 cup Pyrex measure, depending on what's closest), mix the eggs, cottage cheese, onion powder, and dill until thoroughly combined (a spoon will do just fine for the mixing). Stir in the oats and three tablespoons of the cheese. Coat two small ramekins or custard cups with non-stick cooking spray and divide the mixture between the ramekins/cups. Divide the remaining one tablespoon of cheese between the two ramekins/cups, sprinkling the cheese on top of the mixture in the cups. Put the ramekins/cups in the air fryer, set the temperature at 360 degrees, and cook the quiches for about 10 minutes or until set and lightly browned. Reduce the heat to 280 degrees and cook the quiches for 2 minutes longer. Let the quiches cool a little before serving them. You can turn the quiches out of their ramekins/cups for serving or serve them inside the ramekins/cups. Turning the quiches out on a plate will help them cool faster for quicker consumption.
