These little air fryer pies are about as easy as you can get, and they'll be ready in minutes. You don't need much to make them, just an apple, a can of biscuits, and a few other ingredients you probably have on hand. For something so simple and easy, the pies are amazingly good. The pies are best served warm, and you can reheat them in the air fryer for a few minutes, if you'd like to make them ahead. We like the pies with vanilla ice cream, but I suspect they'd also be good topped with whipped cream. The little pies also make a nice, special treat for a weekend breakfast or brunch (though you might want to leave off the ice cream at breakfast time!). Enjoy!
Air Fryer Apple Biscuit Pies -- Makes 2
2 large (or grand-size) refrigerated canned biscuits*
1 medium apple, peeled, cored, and chopped into smallish (1/2-inch or so) pieces
1 teaspoon of butter, melted
1/4 teaspoon of cinnamon
1/8 teaspoon of nutmeg
1 tablespoon of sugar
1 tablespoon of orange marmalade or apricot or peach jam or similar
1-2 tablespoons of chopped pecans or walnuts, optional but good
Cut two small pieces of baking parchment to fit your air fryer basket. With your hand, flatten out the biscuits until they are about 1/8-1/4-inch thick and about 4 inches in diameter (no need to be super-exact, here, just flatten out the biscuits!). In a bowl or measure stir together the melted butter, cinnamon, nutmeg, sugar, and marmalade until well mixed. Divide the mixture between the two flattened biscuits, spreading it to within about 1/2-inch of the edges of the biscuits. Sprinkle the nuts on top of the apple mixture. Spritz the topping on each biscuit with a little non-stick cooking spray. Air fry the biscuit pies (one or two at a time, depending on the size of your air fryer) at 320 degrees for 10-15 minutes or until puffed and golden brown. Let the pies cool a few minutes and serve them warm.
*Note: Yes, I know, cans of biscuits usually have 4-8 biscuits in them. You only need two for the recipe. You can scale the recipe up to make more pies, if you'd like, or bake the remainder of the biscuits to serve for dinner or breakfast.
