These desserts are incredibly fast, easy, and good. You almost don't need a recipe, but I'm giving you one anyway! The "Betties" or crisps, if you prefer that title, are sweet-tart and have a slight crunch from crumbled cookies. I use "Maria's" cookies, but vanilla wafers or similar cookies would work fine. You can use fresh raspberries if you have them, but I always use frozen, which are cheaper and available year round. I generally make the desserts in two small baking dishes that fit in my air fryer, and small ramekins also work well for individual servings. I think the "Betties" are best served warm with vanilla ice cream, but I've been known to have a scoop (or two) of the "Betties" cold, from the refrigerator. The sweet-tart taste of the raspberries shines through either way. Enjoy!
Air Fryer Raspberry Betty or Crisps -- Serves 4
1/4 cup of sugar
1/4 cup of apricot jam, softened in the microwave for about 20 seconds
3 tablespoons of melted butter
12 ounces of frozen raspberries
1/2 sleeve of Maria's cookies (about 15 or 1 cup of crumbled cookies) or vanilla wafers,
crumbled
Ice cream, optional but good!
Spritz two 4-inch square baking dishes or 4 large ramekins with non-stick cooking spray. In a medium bowl mix together the sugar, jam, and butter. Stir in the raspberries and crumbled cookies until coated with the sugar/butter mixture. Spoon an equal amount of the raspberry mixture into each baking dish/ramekin. Spritz the top of the mixture in each dish/ramekin with a little non-stick cooking spray. Put one filled dish/2-4 ramekins in your air fryer basket, put the basket in the air fryer and air fry the "betties"/crisps at 320 degrees for 15-20 minutes until bubbly and brownish on top. Remove the dish/ramekins from the air fryer and let them cool a little before serving, preferably with ice cream. Repeat the cooking process with the remaining filled dishes/ramekins.
