Need a Quick Dessert? Make Air Fryer Almond Blondies

These little bars are great! They are simple to mix up, don't require a lot of weird ingredients, and taste amazingly good. The bars are soft, squishy, and filled with almond flavor. I "bake" the bars in my air fryer in two small, 5-inch square dishes, but similar-sized pans would work. I haven't tried a small cake tin, but I feel certain that would work for triangle-shaped, rather than rectangular cookies. Just find something that will fit in your air fryer and make the bars! The Almond Blondies bake in about 15 minutes, and they make a wonderful dessert "as is," or you can serve them alongside ice cream, sherbet, or fresh fruit. The little bars also are great with a cup of tea for a snack. Enjoy!

Air Fryer Almond Blondies -- Makes About 8 Bars


1 large egg

1/4 cup of sugar

1/4 cup of dark brown sugar

2 1/2 tablespoons of melted butter

1/2 teaspoon of vanilla extract

1/4 teaspoon of almond extract

2/3 cup of flour

1/4 teaspoon of baking powder

1/8 teaspoon of salt

1/4 cup of sliced almonds, plus 2 tablespoons, divided

1/4 teaspoon of cinnamon

1 teaspoon of sugar


In a medium-sized bowl or measure, beat together well the egg, sugars, butter, and extracts. Stir in the flour, baking powder, salt, and 1/4 cup of sliced almonds. Line two small dishes, 5-inches square, or similar, with aluminum foil and then spray the foil with non-stick cooking spray. Divide the dough between the two dishes. Sprinkle the top of the dough with the cinnamon and sugar and the remaining almonds, pressing the almonds into the dough a little. Put one dish of dough into your air fryer basket and put the basket into the air fryer. Air fry the blondies at 320 degrees for about 15 minutes or until they are just firm and golden. Remove the first dish of blondies from your air fryer basket and repeat the cooking process with the remaining dough. Let the blondies cool for 5-10 minutes, then lift them out of their dish, using the aluminum foil to remove them. Cut the baked blondies in each dish into four squares.
