You can make two five-inch square raspberry cobblers or four-to-six mini cobblers in ramekins with this recipe. The cobblers are sweet, tart, and packed with raspberries--just the thing to top with vanilla ice cream or whipped cream for a special dessert. The raspberry cobblers don't require weird ingredients, mix up quickly, and you can use frozen raspberries if you don't have or don't want to spend the money on fresh berries. I use a microwave to speed things along with the recipe preparation, and the cobblers bake in about 20 minutes in the air fryer. The cobblers are "homey" yet sophisticated with their intense raspberry taste. You probably won't have anyone turning them down! Enjoy!
Air Fryer Raspberry Cobblers -- Makes 2 Mini Cobblers or 4-6 Ramekins
1 tablespoon of milk
1 tablespoon of butter
1/3 cup of sugar
1 large egg
1/2 teaspoon of vanilla
1/2 cup of flour
1/2 teaspoon of baking powder
1/4 teaspoon of salt
Topping
1/4 cup of water
1/4 cup of sugar
12 ounces of frozen (or fresh) raspberries
In a medium bowl or measure, microwave the milk and butter together until the butter melts (20 seconds or so). Stir in the sugar, egg, and vanilla until well mixed. Gently stir in the flour, baking powder and salt until incorporated. Spritz two five-inch-square dishes or pans with non-stick cooking spray, or spritz four-to-six ramekins with non-stick spray. Divide the batter among the dishes or ramekins, scraping out the bowl well. To the now empty bowl, add the sugar and water and microwave them together for a minute. Stir to dissolve the sugar in the hot water. Stir in the frozen or fresh raspberries. Pour the raspberry mixture over the batter in the dishes/ramekins, dividing the raspberry mixture evenly. Put one dish or two or three ramekins in your air fryer basket, put the basket in the air fryer and air fry the cobblers at 350 degrees for about 20 minutes or until the cobblers are bubbling and the topping is a deep brown. Remove the dishes/ramekins from the air fryer basket to cool and repeat the cooking process with the remaining dishes/ ramekins. Serve the cobblers warm with ice cream or whipped cream. The cobblers also reheat well in the air fryer--just give the cold cobblers a few minutes at 300 degrees to warm them.
