These stuffed squash air fry in about 20 minutes and are diabetic friendly and great for anyone else who wants to eat "healthy." The squash are easy to make using your microwave and air fryer, and they are really good as well as being nutritious. The squash are filled with a comforting, creamy mixture that includes smokey ham, onions, spinach, and Parmesan and cheddar cheeses. The stuffed squash are great sprinkled with a few breadcrumbs, which toast up to crunchy goodness in the air fryer. Because the squash are so packed, nutritionally, you won't need to serve much with them. A salad would be plenty. The squash also are great reheated if you have leftovers. Enjoy!
Air Fryer Ham-Stuffed Acorn Squash -- Serves 2+
1 large acorn squash
1/4 cup of chopped onion
3 cups of fresh spinach
1 cup of chopped, cooked ham
1/2 cup of plain Greek yogurt (fat-free is fine)
1 tablespoon of Parmesan cheese
1/2 -1/3 cup of shredded sharp cheddar cheese
Fresh whole-wheat bread crumbs to sprinkle on top (a small roll or half an
English muffin--I used a small oatmeal roll with raisins!)
Parsley to sprinkle (optional)
Tear off a piece of aluminum foil that will fit in the bottom of your air fryer basket and an inch or two up the sides of the basket. Spritz the foil with non-stick cooking spray. Pierce the acorn squash in several places with a sharp knife, put the squash on a plate, cover it with a paper towel, and microwave the squash for about 5 minutes or until mostly cooked. Split the squash in half and remove the seeds and stringy membrane. Put the squash on the aluminum foil in your air fryer basket. Microwave the onion with a couple of teaspoons of water for about a minute or until the onion softens a little. Stir in the spinach and microwave the spinach and onion for another minute to melt the spinach down. Stir in the chopped ham, the yogurt, Parmesan cheese, and shredded cheddar. Stuff the squash halves with the ham mixture, dividing the ham mixture between the two halves. Sprinkle the fresh bread crumbs on top of the stuffed squash, pressing them into the ham mixture a little. Spritz the tops of the stuffed squash with a little olive oil or non-stick cooking spray (it will help keep the bread crumbs in place and from burning too much). Air fry the stuffed squash at 320 degrees for about 20 minutes or until a deep golden brown. Sprinkle the squash with a little fresh parsley and cut the halves in half (into quarters) before serving them, if you'd like.
