Make Quick and Easy Pineapple Scones in Your Air Fryer

These really are simple scones, and the recipe is great to make when you're out of time and need a quick treat. The scones are the "drop" style, but I moisten my hands with water and shape them up a bit into rounds. Sprinkled with a little sugar, the scones look and taste exceptionally good! The scones are light, moist, and taste of pineapple and a touch of rum thanks to a smidge of rum extract in the dough. You can add a little coconut if you'd like for extra tropical flavor, but I usually don't bother. The scones are great as they are. I like to serve them for dinner as something a little special alongside a simple meat and vegetable. The scones also are great for breakfast and with tea and coffee. Although I make the scones in my air fryer, you can also bake them in a regular oven (400 degrees for about 20 minutes). Enjoy!

Air Fryer Pineapple Scones -- Makes 6


1/4 cup of sugar

1/2 cup of crushed pineapple

1/2 cup of whipping (heavy) cream

1/4 teaspoon of allspice

1/4 teaspoon of rum extract

1 cup of self-rising flour

Sugar to sprinkle


In a medium bowl or measure (a quart-size Pyrex measure works well) mix the sugar, pineapple, whipping cream, allspice, and rum extract well. Stir in the self-rising flour just until blended and a moist dough forms. Cut pieces of baking parchment to fit your air fryer basket. Drop two or three 1/4-cup (approximately) scoops of dough (depending on the size of your air fryer) out onto each piece of parchment, leaving at least an inch between the dough scoops. With damp fingers, mold the dough mounds slightly into rounds. Sprinkle the tops of the mounds with a little sugar. Put one dough-topped piece of baking parchment into your air fryer basket, put the basket in the air fryer, and air fry the scones at 320 degrees for 12-15 minutes until they are a light golden brown. Remove the scones to cool and repeat the cooking process with the remaining dough.
