These cookies are low sugar and high taste! They contain no wheat flour and no artificial sweeteners, and come out of the air fryer soft, fragrant, and delicious. You can use pumpkin or Kabocha squash to make the cookies. You'll also need a little date paste (or just mash some dates in a cup--see below), which is the primary sweetener for the cookies. I use a small amount of butterscotch chips in the cookies, but you can use dark chocolate chips, nuts, or leave out the additions. These cookies (in small amounts) are acceptable in a diabetic diet and, with a big glass of milk, make good snacks for kids. I like the cookies fresh and warm from the air fryer and eat them on a plate with a fork while they are still soft and a little squishy. They're a little like pumpkin pie in a cookie format. Enjoy!
Low Sugar Pumpkin (or Kabocha) Spice Cookies -- Makes 9 - 12
1 cup of pumpkin or Kabocha squash, mashed with 2 tablespoons of orange juice
1 large egg
1/4 cup of plain Greek yogurt (fat free is fine)
1/4 cup of canola oil
1/4 cup of date paste (cover 1/4 cup of dates with very hot or boiling water--you only
need enough water to just cover the dates--and let the dates/water sit for five minutes,
then mash the dates and liquid with a fork)
1/4 cup of coconut flour
1 teaspoon of baking powder
1/4 teaspoon of baking powder
1/4 teaspoon of salt
1 teaspoon of pumpkin spice
1/4 cup of butterscotch chips, dark chocolate chips, or chopped nuts
In a medium bowl whisk together the pumpkin, egg, yogurt, oil, and date paste. With a spoon stir in the coconut flour, baking soda, baking powder, salt, and pumpkin spice. Let the mixture sit for at least 15 minutes (preferably an hour). Drop 1 1/2 - 2 tablespoon mounds of dough on small pieces of parchment paper (that will fit in your air fryer basket), leaving space between the mounds. Flatten out the mounds with damp fingers until the mounds are about 1/2-inch rounds. Air fry the dough at 320 degrees for 10-13 minutes or until the cookies are cracked, browned a little in places, and just set. Remove the cookies from the air fryer to cool. The cookies will be quite soft and squishy when you remove them and will need a little standing time to firm up a bit (but not too much!).
