Yes, it's possible to cook thin boneless pork chops in the air fryer and have them turn out well--moist, tender, and full of flavor. The key is to season the chops with a spice and olive oil mixture and then to cook them quickly. Because the chops are so thin, you don't need to flip them. When they come out of the air fryer, you can eat the chops "as is," or try the simple lemon garlic sauce recipe below. I use the microwave to make the sauce while the pork cooks in the air fryer. The sauce complements the seasoning on the pork chops and provides something special to dress up rice, a potato, pasta, or even a green vegetable. Enjoy!
Five Minute Air Fryer Pork Chops -- Serve 2+
4 - 5 thin-cut boneless pork chops (1/4 - 1/2-inch thick)
1/4 teaspoon of salt
1/4 teaspoon of lemon pepper (unsalted)
1/4 teaspoon of garlic powder
1/4 teaspoon of onion powder
1/4 teaspoon of ground coriander
1/4 teaspoon of sweet paprika
1 tablespoon of olive oil
Spritz with non-stick cooking spray a small piece of aluminum foil large enough to fit in your air fryer basket and an inch or two up the sides of the basket. Lay the pork chop cutlets on the foil, preferably not overlapping, or at least not by much. In a cup combine the salt, lemon pepper, garlic powder, coriander, and paprika and stir them together. Stir in the olive oil. Divide the mixture evenly among the chops, and, with the back of a spoon, smear the mixture all over the tops of the pork chops. Air fry the pork chops at 400 degrees for 4-5 minutes or until just cooked through. DO NOT OVERCOOK the chops, or they'll be tough. Serve the chops "as is" or with the sauce below.
Lemon-Garlic Sauce
1 cup of hot water mixed with a teaspoon of reduced sodium chicken "Better Than Bullion" or a cup of chicken broth
2 tablespoons of lemon juice
1/2 teaspoon of dried parsley flakes
1/2 teaspoon of garlic powder
1 tablespoon of butter
1 teaspoon of potato starch (or use cornstarch) mixed with 1 tablespoon of water
In a medium bowl or Pyrex measure mix the chicken Better Than Bullion/broth, lemon juice, parsley, garlic powder, and salt and pepper. Microwave the mixture until it's hot--a minute or two, depending on your microwave--then stir in the butter. Microwave the mixture for another minute or so (stirring after 30 second increments), then stir in the potato (or cornstarch) mixture. Microwave the mixture another 30 seconds or until the mixture thickens slightly. Serve the sauce--it will be fairly runny, like syrup, rather than like a thick gravy--with the pork chops.
