These tilapia fillets take minutes to prepare and air fry in about 15 minutes. They are light and full of flavor with a simple sauce of butter, olive oil, and lemon. Parsley and plenty of garlic add extra taste, and a sprinkle of grated Parmesan helps with browning as well as giving the fish an extra bit of salty, nutty flavor. Despite the butter, the fillets are light and great if you're on a diabetic diet or just want to "eat healthy." Try the fillets with a quinoa to catch all the juices or serve the fish with a green vegetable and salad for a really nutritious, low-carb meal. I make the fillets in the air fryer, but you also can bake them in a regular oven at 400 degrees for 15-20 minutes. Enjoy!
Lemon-Butter Tilapia With Parsley and Garlic -- Serves 2
1/2 - 3/4 pound of tilapia fillets
1 tablespoon of butter, melted
1 tablespoon of olive oil
2 tablespoons of lemon juice
2 - 3 tablespoons of chopped parsley
2 - 3 teaspoons of chopped garlic (2-4 cloves)
1/8 teaspoon of salt
1/8 teaspoon of pepper
1 tablespoon of grated Parmesan cheese
Line the bottom and about an inch up the sides of your air fryer basket with aluminum foil and spritz the foil with non-stick cooking spray. In a cup or small bowl mix together well the butter, oil, lemon juice, parsley, garlic, salt, and pepper. Cut the tilapia fillets in half vertically, using the dark center line that runs up the fish as a guide. Place the thick pieces of fish on the outside edges of the foil in the air fryer basket and the center pieces of fish, slightly overlapping, in the middle (you want approximately the same thickness for the fish pieces). Pour or drizzle the butter mixture evenly over the fillets. Sprinkle the tops of the fillets evenly with the Parmesan. Air fry the fish at 360 degrees for 10-15 minutes or until the fish is golden brown and flakes easily with a fork.
