This simple tilapia recipe is great when you're in a hurry and need something good and nutritious. The tilapia takes just a few minutes to prepare, and the air fryer cooks it in about 15 minutes. Easy Air Fryer Tilapia With Pecans -- Serves 2
3/4 pound of tilapia fillets
2 tablespoons of plain, non-fat Greek yogurt
1 teaspoon of Dijon mustard
1 tablespoon of chopped fresh parsley (or use a teaspoon of dried flakes)
1 teaspoon of chopped fresh dill (or use about 1/2 teaspoon of dried dill)
1/8 teaspoon of pepper
1/8 teaspoon of salt
1/3 - 1/2 cup of chopped pecans
Cut a piece of aluminum foil to fit the bottom and about an inch up the sides of your air fryer basket. Spritz the foil with non-stick cooking spray. Pat the fish dry with a paper towel and cut each fillet in half, vertically, using the center line that runs up and down the filet as a guide. Put the fish pieces on the foil with the thicker sides toward the sides of the basket (you can put the thin pieces in the middle). In a cup mix together well the yogurt, mustard, herbs, salt, and pepper. Dollop the fish pieces with the mixture and then spread the mixture out to cover the tops of the fillets. Sprinkle the pecans evenly over the topped fillets and press the pecans into the topping just a little. Spritz the pecan-topped fillets with a little olive oil or canola oil. Air fry the fish at 360 degrees for about 15 minutes or until the tilapia is cooked to your liking.
