These are great and easy biscuits to make when you want to add a quick and savory bread to your dinner or you want a non-sweet biscuit option for breakfast. The biscuits are "drop" biscuits, meaning you don't need to roll them out. They also are reasonably nutritious with white whole-wheat flour, flax seed meal, Greek yogurt, and olive oil. A little Swiss and Parmesan cheese add protein as well as flavor. I like to add chopped green onion to the biscuits, but you can also use chives, if you have them. The biscuits air fry in about 10 minutes, so you can have them fresh and hot. Enjoy!
Air Fryer Swiss Cheese and Onion Biscuits -- Makes 6 - 8
1 cup of white whole-wheat flour
1 teaspoon of baking powder
1/4 teaspoon of salt
1 tablespoon of flax seed meal
2 tablespoons of olive oil (extra virgin)
2 tablespoons of plain Greek yogurt (fat free is fine)
1 teaspoon of Dijon mustard
1/2 teaspoon of dried dill weed
1 tablespoon of grated Parmesan cheese
2 tablespoons of shredded Swiss (or Gruyere) cheese
2 - 3 tablespoons of chopped green onions
4 tablespoons of milk
In a large bowl whisk together the flour, baking powder, salt, and flax meal. Drizzle in the oil and mix/cut it in with a fork. Add the yogurt, mustard, dill, and Parmesan and mix them in. Stir in the Swiss cheese and onions. Gradually add the milk, about a tablespoon at a time, mixing in just enough milk for the dough to come together (you may or may not need all the milk). The dough should be fairly sticky. Cut small pieces of baking parchment to fit your air fryer basket. Drop small mounds of the batter about an inch or so apart on the parchment. You can shape up the dough with damp hands, if you want more uniformly shaped biscuits. Air fry the biscuits at 360 degrees for about 10 minutes or until golden brown and puffed. Remove the biscuits from the air fryer to cool just a little before serving them. Repeat the cooking process with any remaining dough if necessary.
