You can make these lasagna roll-ups with or without meat, and they cook in about 15 minutes in your air fryer. The roll-ups have all the classic tastes of lasagna--creamy ricotta and salty/nutty Parmesan cheeses, pasta noodles, and red sauce. You can use whatever sauce you like. I usually use leftover homemade spaghetti sauce, but jarred sauces will work fine. You will need to plan a little ahead and soak the lasagna noodles, but that doesn't take long (usually 15-20 minutes), especially if you use no-boil noodles. This is a great recipe for serving a small family, as you won't have endless quantities of lasagna left over (although you might want the leftovers, which are quite good). Enjoy!
Air Fryer Lasagna Roll-Ups -- Serves 2-3
1 cup of ricotta cheese (reduced fat is fine)
3/4 -1 cup of Italian-style shredded cheese, divided
3 tablespoons of grated Parmesan cheese, divided
1/2 teaspoon of dried basil
5 - 6 no-boil lasagna noodles
Boiling water
2 cups of spaghetti sauce (or other red pasta sauce)
Fresh torn basil, optional
Spritz with non-stick cooking spray a double thickness of aluminum foil large enough to fit inside your air fryer basket and about 2 inches up the sides of your basket. In a medium bowl or measure mix together well the ricotta, about 1/2 cup of the Italian-style shredded cheese, 2 tablespoons of the grated Parmesan, and the basil. Set the mixture aside. Put the lasagna noodles in a large casserole dish or pan large enough to accommodate their length. Pour enough boiling water over the noodles to cover them and let the noodles sit until they've absorbed enough water so that they are pliable. Lift the noodles out of the water and put them, side-by-side, on a paper towel or piece of waxed paper. Divide the ricotta mixture among the noodles, spreading the ricotta out to cover the surface of the noodles. Roll up the noodles, jelly-roll fashion, and place them on the prepared aluminum foil with the ruffled edges pointing upward (the filling showing). It's fine if the roll-ups touch each other (they may, depending on the size of your air fryer). Pour the spaghetti sauce over the roll-ups. Put the filled basket in your air fryer and air fry the roll-ups at 320 degrees for about 15 minutes. Sprinkle on the remaining Italian cheese and Parmesan cheese and return the basket to the air fryer for a few minutes at 320 degrees to melt the cheese. Carefully lift the roll-ups out of the air fryer basket using the aluminum foil as a sling. Let the roll-ups cool a few minutes before serving them, sprinkled with a little fresh basil, if you'd like.
