This easy, nutritious recipe takes only a few minutes to make and cooks in your air fryer in 12-15 minutes. The fish comes out of the air fryer moist and delicious with a faint hint of lime and plenty of coconut flavor. You won't need bread crumbs, so if you're watching your carbohydrates, this recipe won't be a problem. The tilapia is a great option if you're in a hurry. We like it with baby potatoes and a green vegetable, which I microwave while the fish is cooking. Enjoy!
Air Fryer Coconut-Lime Tilapia -- Serves 2
3/4 pound of tilapia filets
1/4 cup of plain Greek yogurt (fat free is fine)
1 teaspoon of lime juice
Dash of pepper or lemon pepper
1/8 teaspoon of salt
1 1/2 tablespoons of shredded coconut
1/4 teaspoon of coconut extract
Spritz with non-stick cooking spray a piece of aluminum foil that's large enough to fit inside your air fryer basket and an inch or two up the sides. Pat the fish dry with a paper towel and cut the filets in half along the center line that runs vertically up the filets. Place the fish pieces on the foil, putting the thin pieces in the center and overlapping them a little so that the fish pieces are approximately the same thickness. In a small bowl or cup combine the yogurt, lime juice, pepper, salt, coconut, and coconut extract. Spread it evenly over the tops of the filets. Air fry the fish at 360 degrees for 12-15 minutes or until the topping is a deep golden brown and the fish flakes with a fork.
