Want to make some soft, chewy apple bars in your air fryer but don't have a pan? No problem. You don't need a pan. You can double up some aluminum foil and create a sling in which your apple bars can bake and that you can use to lift out the bars (carefully) when the bars are done. The not-too-sweet bars are great for breakfasts and snacks. They are rich in apple taste thanks to applesauce and chopped apples. Plenty of oats provide texture and chew, and sweet spices enhance the flavor of the bars. I add nuts for extra crunch and raisins for extra sweetness, but you can bake the bars without them if you prefer.
Air Fryer Apple Bars -- Makes 8-12
1/4 cup of applesauce
1/4 cup of canola oil
1 large egg
1/4 cup of sugar
1/4 cup of dark brown sugar
1/2 teaspoon of vanilla
2 small apples, peeled, cored, and chopped into 1/2-inch pieces (about 1 - 1 1/3 cups)
1/2 cup of flour
1 teaspoon of cinnamon
1/4 teaspoon of nutmeg
1/2 teaspoon of baking powder
1/4 teaspoon of salt
1 1/4 cups of oats (old fashioned)
1/2 cup of chopped pecans or walnuts
1/2 cup of raisins
In a large bowl combine the applesauce, oil, egg, sugars, and vanilla well. Stir in the apples. Add the flour, cinnamon, nutmeg, baking powder, and salt and stir them into the liquid ingredients until combined. Stir in the oats, nuts, and raisins. Line your air fryer basket with aluminum foil, placing the foil about two inches up the sides of the basket, then place another layer of foil on top of the first, crimping the edges of the foil on the sides of the basket together to make it easier to lift the bars from the basket later. Spritz the foil with non-stick cooking spray. Pour the batter into the foil-lined air fryer basket and smooth the batter out and into the corners of the basket (or just even it out if the basket is round). Put the basket into the air fryer, set the temperature to 320 degrees, and air fry the apple bars for 20-30 minutes or until golden and a pick inserted in the center of the bars comes out with no wet batter attached. Remove the basket from the air fryer and let the bars cool in the basket for 5-10 minutes. When the basket is cool enough to do so, carefully lift the bars out of the basket, grasping the foil on the sides and lifting the foil and bars out. Place the bars/foil on a hot pad/rack to cool completely before cutting them. You can cut the bars while they are warm, but they will crumble. Mine did, because certain people in my household couldn't wait for them to cool. The bars taste good, though, crumbs and all!
