This version of stuffed bell peppers is a little different from the usual and quite good. Making the stuffed peppers is easy, and they air fry in about 20 minutes. The peppers come out of the air fryer crispy brown on top and creamy and delicious inside. The flavors of the ham, pepper, and onions meld with the rice and cheeses for a true "comfort dish." The stuffed peppers also are economical, with a small amount of ham boosted with cottage and cheddar cheeses for plenty of protein. If you have any leftovers, the stuffed peppers make great lunches. Air Fryer Ham-Stuffed Peppers -- Makes 4 Stuffed Peppers
2 large bell peppers (preferably red, yellow, or orange), split and seeded
1/4 cup of chopped onion
1 - 1 1/2 cups of chopped ham
1/4 teaspoon of garlic powder
1/4 teaspoon of pepper
1/2 teaspoon of dried parsley flakes
1 cup of cooked rice
1/2 - 3/4 cup of cottage cheese
1/2 cup of shredded cheddar cheese plus 2 tablespoons, divided
Cut a piece of aluminum foil to fit in the bottom of your air fryer basket and about 2 inches up the sides of the basket. Spritz the foil well with non-stick cooking spray. Arrange the peppers in one layer on the foil in the basket. In a large bowl combine the onion, ham, garlic powder, pepper, parsley flakes, rice, cottage cheese, and 1/2 cup of cheddar cheese. Stir the mixture well and divide it between the pepper halves, mounding the mixture, if necessary, in the pepper halves. Air fry the stuffed peppers at 320 degrees for about 20 minutes or until the peppers are nicely browned on top. Sprinkle the remaining two tablespoons of cheese evenly on top of the air fried peppers before serving them.
