Make an Easy Italian Baked Egg Breakfast in Your Air Fryer

You can cook an egg in your air fryer in minutes and have a fresh, hot, tasty breakfast that's high in protein and will keep you fueled for your morning activities. You'll need a small ramekin or custard dish that's oven safe. You can vary what you add to your egg, but the recipe I'm providing below starts with a fresh tomato--a large cherry, Campari, or Roma tomato works just fine. I also use Italian herbs, but, again, you can use what you like. The cooking time for your egg will depend on how you like it. I like my eggs cooked all the way through--yolks, too (I know, the foodies will hate me, but too bad, so sad)--so I cook mine for about five minutes. If you want the yolks runny, start checking your egg after two minutes to get it just they way you like it. I also top the egg with bread crumbs, which provide a nice crunch. Half a crumbled roll or the heel of a loaf of bread will do just fine for those crumbs. As you probably have surmised, this isn't a fancy or complicated recipe. It's a quick, use-what-you-have, nutritious and delicious food fix. Enjoy!

Italian Baked Egg Air Fryer Breakfast -- Serves 1


1 smallish tomato

1/4 teaspoon of dried Italian herbs (or use a teaspoon or so of fresh)

2 teaspoons of grated Parmesan cheese, divided

1 large egg

1 tablespoon of milk

1-2 tablespoons of fresh bread crumbs/chunks (about half a small dinner roll)

Salt and pepper


Spritz a ramekin or custard cup with non-stick cooking spray. Slice the tomato into rounds and put the rounds into the ramekin. Sprinkle on the Italian herbs and a teaspoon of Parmesan. Put the tomatoes in the air fryer and cook them at 360 degrees for a few minutes until they are hot and have released some of their juices. Break the egg into the ramekin and let it fall onto the tomatoes. Pour the milk over the egg. Add salt and pepper if you like. Sprinkle the bread crumbs/chunks on top of the egg and then sprinkle on the remaining 1 teaspoon of Parmesan. Spritz the crumbs/Parmesan with a little cooking spray. Put the ramekin in the air fryer basket and cook the egg for 3-6 minutes at 360 degrees or until the egg is done to your liking (poke it with a knife or fork to see). You can serve the egg in the ramekin (easiest) or flip the egg out onto a piece of toast then back onto a plate.
