Make Almond Joy Cookies in Your Air Fryer

These are simple cookies that taste like the famous candy bars, only in cookie format. The cookies are loaded with almond flavor as well as coconut. Rather than being coated in chocolate like the candy, the cookies benefit from a scattering of chocolate chips in the dough. The cookies are soft and chewy on the inside, with just a bit of crunch or hardness on the exteriors. The recipe I'm posting makes only six cookies, but you can double the recipe for more, if you'd like. I make only six because the cookies are too tempting to leave around the house. The cookies are perfect for a "light" dessert with coffee or for a tea-time snack. Enjoy!

Ingredients


1 tablespoon of melted butter, cooled

1 egg white from a large egg

1/4 cup of confectioners' sugar

1/4 teaspoon of almond extract

1/8 teaspoon of salt

1/2 cup of almond flour

1/4 teaspoon of baking powder

1/2 cup of shredded coconut

1/4 cup of chocolate chips


In a medium bowl, mix the butter, egg white, confectioners' sugar, almond extract, and salt well. Stir in the almond flour and baking powder until combined. Stir in the coconut and chocolate chips. Cut small pieces of baking parchment to fit in your air fryer basket. Drop several 1 1/2 tablespoon mounds of dough onto each piece of parchment, spacing the dough mounds at least an inch apart. With your fingers, flatten the mounds slightly. Put one dough-topped piece of parchment in the air fryer basket, put the basket in the air fryer, and air fry the cookies at 300 degrees for about 12 minutes or until lightly browned and just set. Remove the cookies from the basket to cool and repeat the cooking process with the remaining cookies.
