Make Air Fryer Creamy Spinach Topped Tilapia for a Fast, Easy Dinner

This is an easy recipe that's tasty and nutritious. Mild tilapia is topped with a fresh spinach mixture and then popped in the air fryer for about 15 minutes. The tilapia comes out of the air fryer moist and with a crusty brown topping. That topping, which includes onions, spinach, Greek yogurt, and Parmesan cheese, provides significant flavor to the dish and helps to protect the fish from overcooking. This is a "hard to mess up" recipe that's worth cooking repeatedly. Enjoy!

Air Fryer Creamy Spinach Topped Tilapia -- Serves 2+


3/4 pound of tilapia fillets

1/4 teaspoon of salt

1/4 cup of chopped onion

1-2 teaspoons of chopped garlic

2 handfuls (about 2 cups) of fresh spinach

1/4 teaspoon of lemon pepper

1/4 cup of plain Greek yogurt (fat free is fine)

2 tablespoons of grated Parmesan cheese

1 teaspoon of Dijon mustard


Cut a piece of aluminum foil that will fit in your air fryer basket and an inch or two up the sides of the basket. Spray the foil with non-stick cooking spray. Pat the tilapia dry with a paper towel and cut it into two pieces, using the dark center line that runs vertically up the fish as a guide. Lay the fillets on the foil, placing the thickest sides to the outside of the foil and overlapping the thin slices a little in the middle of the foil. Sprinkle the fillets with the salt. Put the onion in a medium microwave-safe bowl (I use a quart-sized Pyrex measure) with a teaspoon or two of water and microwave it for 1-2 minutes until it wilts a little. Stir in the chopped garlic, the spinach, and the lemon pepper until the spinach wilts (you can microwave the mixture another 30 seconds or so to make the spinach wilt more quickly). Add the Greek yogurt, Parmesan cheese, and mustard to the mixture and stir it well. Spread the mixture evenly over the tops of the fish fillets. Air fry the fish at 360 degrees for 15-18 minutes or until the fish flakes easily with a fork and the tops are a deep, spotty brown. Remove the fish from the air fryer basket using the foil as a sling. Let the fish cool a couple of minutes before serving it.
