Yes, this is a really, really easy dessert, and yes, it's delicious. You can make Caramelized Banana Tarts in your air fryer in about 15 minutes. I haven't tried making the tarts in a regular oven, but I imagine you can, though the tarts probably won't brown quite as well as when you make them in an air fryer. Made in an air fryer, the tarts have a slightly crispy base, and the bananas caramelize to an incredible sweetness. A little jam--I use apricot or peach--helps the bananas stay put on top of the tarts, helps the bananas caramelize, and adds extra flavor to the tarts. If you'd like to make the tarts "diabetic friendly," you can. Just substitute no-sugar-added jam rather than the regular jam (and don't eat more than one tart--of course!). With a dusting of cinnamon, the tarts are special, even though they are simple and inexpensive to make. We like the tarts warm from the air fryer with a little vanilla ice cream or a fluff of whipped topping or cream. Enjoy!
Caramelized Banana Tarts -- Makes 4
Small tube of "grand" or extra-large biscuits (you need 4 biscuits)*
2 small/medium bananas, preferably very ripe
4 tablespoons of apricot or peach jam or preserves
A little cinnamon to dust
Ice cream, whipped topping, or whipped cream (optional but good!)
Cut small pieces of baking parchment to fit in your air fryer basket. Separate the biscuits and flatten out each biscuit with your hand (the heel of your hand works well for flattening) until the biscuits are about 1/4-1/3-inch thick. Slice the bananas into rounds and distribute the rounds evenly on top of the flattened biscuits. Stir the jam well and spread a tablespoon or so of the jam on top of the bananas on each biscuit. Sprinkle a little cinnamon on top of the jam on each biscuit. Air fry the tarts at 350 degrees for about 10 minutes or until the bananas have caramelized and the biscuits and bananas are spotty-brown in places. Depending on the size of your air fryer basket, you may be able to air fry only one tart at a time. You can make the tarts ahead and reheat them, if you'd like. The tarts are best warm, preferably with ice cream!
*If you use a tube of 8 biscuits, you can bake the remaining biscuits for dinner or just double the number of bananas/jam and make 8 tarts.
