Make 15-Minute Cashew Tilapia in Your Air Fryer (Diabetic Friendly)

This easy tilapia recipe is a great way to work fish into your diet. The tilapia comes out of the air fryer tender, with a slightly crunchy topping of toasted cashew nuts. Other than the "healthy oil" in the cashew nuts, the recipe is very low in fat. Rather than using mayonnaise to coat the fish before cooking, you'll use a little Greek yogurt, which works well to keep the tilapia moist and tender. Although I usually grind the cashew nuts in a mini-chopper, you can also chop them finely or into smallish bits if you prefer. The tilapia is quite mild, and the cashew topping provides a nice toasty/nutty flavor that isn't overwhelming--just simple and good! Enjoy!

Cashew Tilapia -- Serves 2+


1/2 cup of cashew nuts (unsalted), ground

3/4 - 1 pound of tilapia fillets

1 teaspoon of lemon juice

1/4 cup of plain Greek yogurt (non-fat is fine)

1/8 teaspoon of salt

1/8 teaspoon of pepper

1/4 teaspoon of onion powder

1/2 teaspoon of dried parsley flakes, plus a little extra to sprinkle


Tear off a piece of aluminum foil large enough to fit in the bottom and about two inches up the sides of your air fryer basket and spritz one side of the foil with non-stick cooking spray. Pat the fish dry with a paper towel and cut each fillet in half, vertically, following the dark center line that runs up and down the fillet. Put the larger/thicker pieces of fish on the outside edges of the foil and the thinner pieces of the fish in the middle, overlapping them a little so that the pieces of fish are of an even thickness (more or less!). Put the fish-topped aluminum foil in your air fryer basket and dribble the lemon juice over the fish. In a small bowl or cup stir together well the yogurt, salt, pepper, onion powder, and 1/2 teaspoon of parsley flakes. Spread the mixture evenly over the top of the fish. Pat the ground cashews/meal over the fish/on top of the yogurt mixture. Spritz the meal with a little non-stick cooking spray. Air fry the tilapia at 360 degrees for 10-15 minutes or until the fish flakes easily with a fork and the topping is a light brown. Sprinkle a little more of the parsley flakes on top of the fish, if you like.
