This dessert is incredibly good for something so inexpensive and easy to put together. Making the dessert also is a great way to use up cookies that have passed their prime and bananas that are turning brown. Don't have any leftover cookies? Use vanilla wafers or even animal crackers. They'll work. The bananas caramelize a little in the air fryer and the cookie crumbs meld into a rich, sweet mixture. The dessert is great "as is," but it's even better topped with whipped cream, ice cream (vanilla is good, or try it with rum raisin for a really fancy touch!), or even vanilla yogurt. Enjoy!
Air Fryer Banana Dessert -- Serves 4
2 cups of coarsely crumbled cookies (whatever you have--or use vanilla wafers)
2 tablespoons of melted butter
3-4 tablespoons of dark brown sugar, divided
1 cup of orange juice
1/2 teaspoon of rum extract
2 large, really, really ripe bananas
Spritz two small baking dishes (about 5 inches square or round) with non-stick cooking spray, or use a larger, deeper 7-8 inch souffle dish and spritz it with spray. In a bowl or measure, combine the cookie crumbs, butter, 1-2 tablespoons of brown sugar (depending on the sweetness of the cookies, use less or more), orange juice, and rum extract. Combine the mixture well with a spoon. Slice one of the bananas into the mixture and stir everything again. Divide the mixture between the baking dishes. Slice the remaining banana and top the mixture in each dish with half of the banana slices, pressing them just a little into the moist mixture in the dishes. Sprinkle the remaining brown sugar on top of the banana slices. Put one filled baking dish into your air fryer basket, put the basket in the air fryer, and air fry the banana dessert at 350 degrees for about 15 minutes or until deep golden brown and the bananas and sugar have caramelized on the top of the dessert. Remove the cooked dessert from the air fryer basket to cool and repeat the cooking process with the remaining filled dish, if you're making two small dishes. Serve the dessert warm.
