How to Use Sour Milk to Make No Sugar Added Date Bran Bread in Your Air Fryer or Oven (Diabetic Friendly, No Artificial Sweeteners)

This bread is a good way to use up a lot of sour milk. The bread also is great tasting and "good for you." It's loaded with whole grains, beneficial fiber, and protein, and it's sweetened with dates, not refined sugar. In moderation (of course!) the bread is great if you're on a diabetic diet or want to "eat healthy." The recipe makes two loaves, 24 muffins, or make half and half! I like to make the bread in the air fryer, and you can also bake it in the oven. The bread makes a nice side for dinner, and we like it for breakfast. Enjoy!

Date Bran Bread (Diabetic Friendly) -- Makes 2 Loaves or 24 Muffins


3 cups of sour milk

1 cup of wheat bran

1 cup of oats (I use old fashioned)

2 large eggs

1 teaspoon of vanilla

1/2 cup of date puree (barely cover dates with boiling water, let the mixture cool, and

mash it well with a fork or process it in a food processor)

1/3 cup of canola oil

1 cup of white whole-wheat flour

1 teaspoon of baking powder

1 teaspoon of baking soda

1/2 teaspoon of salt

1 teaspoon of cinnamon

1 teaspoon of ground ginger

1/2 teaspoon of allspice

1/4 teaspoon of cloves

1/2 cup of chopped walnuts, preferably toasted

1/2 cup of chopped dates

1 teaspoon of lemon juice


Put the milk, wheat bran, and oats in a large bowl, stir them, and let them stand at room temperature for at least 30 minutes (you want the oats and bran to absorb some of the moisture from the milk). Add to the bowl the eggs, vanilla, date puree, and canola oil and whisk them in well. Add to the bowl the flour, baking powder, baking soda, salt, and spices, and stir them into the batter with a spoon until blended. Add the walnuts, dates, and lemon juice and stir them into the batter. Spritz two loaf pans (I use 8 x 4-inch pans), 24 muffin cups, or a loaf pan and 12 muffin cups with non-stick cooking spray. (You can also line the loaf pans with aluminum foil and spritz the foil with non-stick cooking spray for easy cleanup and removal of the breads from the pans.) Divide the batter evenly among the pans/muffin cups.

Air Fryer: Air fry the loaves at 320 degrees for about 45 minutes or until a pick inserted in the center of a loaf comes out with no wet batter attached. Air fry the muffins at 320 degrees for about 20 minutes or until a pick inserted in a muffin comes out with no wet batter attached.

Oven: Preheat the oven to 350 degrees and bake the loaves for about 45 minutes or until a pick inserted in the center of a loaf comes out with no wet batter attached. Bake the muffins for 20-25 minutes or until a pick inserted in a muffin comes out with not wet batter attached.
