How to Make Simple Sourdough Cheese and Sunflower Seed Logs or Rolls (Diabetic Friendly)

These easy to make sourdough logs or rolls are simple and really good! The logs are soft and encase a cheese stick that melts a bit in the oven. When you bite into a log, it's a little like eating a grilled cheese sandwich but with a sourdough tang. I use sticks of Gouda cheese in the logs, because the Gouda really complements the sourdough taste well (plus, Lidl and Aldi often put Gouda logs on sale!). You can use whatever cheese sticks you like. Sharp cheddar would be especially good. Sunflower seeds on the outside of the logs give them extra crunch and flavor as well as nutrition. The logs, which feature whole-grain flour and flax seeds as well as the sunflower seeds, are acceptable (of course, in moderation) if you're on a diabetic diet or want to "eat healthy." I like to make the logs in the air fryer, but you also can use the regular oven. The logs are great anytime--alongside dinner, with soups and salads, as a snack, and, especially for a quick, easy breakfast. I reheat the logs in the air fryer in two or three minutes for an almost instant breakfast. Enjoy!

Sourdough Cheese and Sunflower Seed Logs or Rolls -- Makes 8


1 cup of sourdough starter/discard

1/2 cup of milk

1/4 cup of canola oil

2 tablespoons of milled flax seeds

1 cup of white whole-wheat flour


In a large bowl mix all of the ingredients listed above well and loosely cover the mixture with plastic wrap. Let the mixture sit for at least an hour. I usually let the mixture sit for 3-5 hours, and it's fine. When you're ready, add to the mixture:


1 cup of white whole-wheat flour

1 teaspoon of salt


Stir, then knead in the flour and salt. Knead the dough for three to five minutes, adding an additional 1/4 cup of flour or so to prevent the dough from being too sticky to knead. Divide the dough into 8 equal pieces and flatten each piece into an oval shape about four inches long and 1/2-inch thick. Next, you'll need:


8 Gouda or other cheese sticks, each stick 4-6 inches long (about .75-1 ounce)

1/4-1/3 cup of sunflower seeds


Put a cheese stick on each dough oval (you can break the cheese sticks in half, if you need to do so to make them fit better). Roll the dough around the cheese stick to encase it/seal it inside the dough. Dampen the dough rolls with a little water (you can wet your hands and just rub them around the dough rolls a little. Roll each dough roll in the sunflower seeds, pressing down lightly to get the seeds to stick.

Air Fryer: Cut small pieces of baking parchment to fit your air fryer basket. Put two or three dough rolls on each piece of parchment, leaving space for the rolls to rise. Spritz the dough rolls with non-stick cooking spray or canola oil and let the rolls rise until they increase in size by about one-third (this usually takes an hour or two). Air fry the rolls at 320 degrees for 15-20 minutes or until they are a light golden brown. Let the rolls cool a little before serving them warm (the cheese in the rolls will be hot, fresh from the air fryer).

Oven: Line a baking sheet with baking parchment. Put the rolls on the parchment, leaving space for the rolls to rise.  Spritz the dough rolls with non-stick cooking spray or canola oil and let the rolls rise until they increase in size by about one-third (this usually takes an hour or two). Preheat the oven to 350 degrees. Bake the rolls for about 20 minutes or until they are a light golden brown. Let the rolls cool a little before serving them warm (the cheese in the rolls will be hot, fresh from the oven).
