How to Make Simple Meatloaves in Your Air Fryer With Ground Turkey (Diabetic Friendly)

These turkey meatloaves are quite good, easy to make, and you can air fry them in about 30 minutes. The recipe makes two small, 6-inch round loaves--enough for dinner, plus leftovers for later in the week! The turkey loaves are a little different from your run-of-the-mill meatloaves in they include ingredients that highlight the flavor of the turkey. Many recipes treat ground turkey as though it's beef. It isn't. In this version, the turkey comes out of the air fryer gently seasoned with vegetables and spices and quite moist, thanks to some part-skim ricotta cheese. A small amount of quick oats helps to bind the loaves and provides whole-grain fiber. The loaves really make a nice, economical dinner that's also good for you. Enjoy!

Air Fryer Ground Turkey Meatloaves -- Makes 2 Small Meatloaves


1/2 a medium onion, chopped (1/2 - 3/4 cup)

3-4 tablespoons of chopped celery (about 1 stalk)

3/4 teaspoon of salt

1/2 teaspoon of pepper

1/2 teaspoon of garlic powder

2 teaspoons of grainy mustard or Dijon mustard

1 teaspoon of poultry seasoning

1 teaspoon of dried parsley flakes

1/2 cup of part-skim ricotta cheese

1 large egg

16 ounces of lean ground turkey (93 percent)

2 tablespoons of grated Parmesan cheese

1/4 cup of quick oats

Chopped parsley or parsley flakes, optional


Line two 6-inch round (or square) pans with aluminum oil and spritz the foil well with non-stick cooking spray. Put the onion and celery in a large, microwave-safe bowl with a teaspoon or two of water and microwave them for a couple of minutes or until the vegetables soften a little. Stir in the salt, pepper, garlic powder, mustard, poultry seasoning, and parsley flakes. Let the veggie mixture cool a little, then stir in the ricotta, egg, ground turkey, Parmesan cheese, and quick oats until everything is well combined. Divide the mixture between the two prepared pans. You may have to mound it a bit. Spritz the tops of the loaves with a little canola oil, olive oil, or non-stick cooking spray. Air fry the loaves (one-at-a-time, unless you have a giant air fryer) at 320 degrees for about 20 minutes or until the internal temperature of the loaves reaches 165 degrees on an instant-read thermometer. Increase the temperature of the air fryer to 360 degrees and air fry the loaves another 3-5 minutes to brown them a little more on top. Let the loaves cool for 5-10 minutes before serving them, sprinkled with a little parsley, if you like.
