You can mix these simple cakes up in minutes with a whisk and spoon, and they air fry in about 25 minutes. The cakes come out light, tender, and studded with sweet, juicy pears on the inside. Hazelnuts top the cake and provide a buttery crunch. Although optional, I like to drizzle warm caramel sauce on top of the cakes. The caramel sauce complements the pears and hazelnuts and makes the cakes even better, especially if you serve a scoop of vanilla ice cream or a fluff of whipped cream alongside. These cakes are a special dessert, even if they are incredibly easy and reasonably economical. Enjoy!
Air Fryer Hazelnut-Pear Cakes -- Makes Two 6-Inch Cakes
2 tablespoons of melted butter
1/3 cup of canola oil
1/3 cup of plain yogurt (light is fine)
1/3 cup of milk
2 large eggs
1 teaspoon of vanilla
2/3 cup of sugar
1 1/4 cup of flour
1/2 teaspoon of salt
1 1/4 teaspoon of baking powder
1/4 teaspoon each, cinnamon, nutmeg, and ginger
4 small pears, cored, peeled, and chopped into 1/2-inch pieces (about 1 1/2 cups)
1 cup of shelled hazelnuts, preferably roasted
Cinnamon-sugar (2 tablespoons of sugar, 1/2 teaspoon of cinnamon)
1/4 - 1/2 cup of commercial caramel sauce, warmed
Coat two 6-inch round cake pans with baking spray or grease and flour them. In a medium bowl or measure whisk together well thee butter, oil, yogurt, milk, eggs, vanilla, and sugar. Add the flour, salt, baking powder, cinnamon, nutmeg, and ginger and whisk them in gradually until the mixture is mostly smooth (about a minute). Stir in the pears gently. Divide the batter between the two pans. Top the batter in each pan with half the hazelnuts and sprinkle on a little cinnamon-sugar (about a teaspoon each--save the rest for another use). Put one filled cake pan in your air fryer basket, put the basket in the air fryer, and air fry the cake at 320 degrees for about 25 minutes. Remove the cake from the basket to cool and repeat the cooking process with the remaining batter. Let the cooked cakes cool for at least 15 minutes before turning them out (flip them out, then flip them back right-side up). Top the warm cakes with a little warm caramel sauce, if you'd like.
