These are really tasty scones, and making them is an easy way to use up your discard. The scones are nutritious as well as full of flavor and are made with white whole-wheat flour. Cottage cheese, feta cheese, and a bit of Parmesan cheese boost the protein in the scones as well as keeping the scones moist. In moderation, the scones--with their whole grain, fiber, and protein content--are fine on a diabetic diet. I use the food processor to make the scones, which means that the treats can come together in minutes. I also cook the scones in the air fryer, but, if you'd prefer, you can bake them in a regular oven at 400 degrees for about 15 minutes. The scones are great anytime and go especially well with soups, salads, and egg dishes. Enjoy!
Quick Sourdough Spinach Feta Scones -- Makes 8+
1 cup of white whole-wheat flour
2 1/2 teaspoons of baking powder
1/4 teaspoon of salt
2 tablespoons of canola oil
1/4 cup of cottage cheese
1 cup of starter/discard
1 cup of frozen spinach
1 teaspoon of onion powder
1/4 cup of crumbled feta cheese
1 tablespoon of grated Parmesan cheese
Put the white whole-wheat flour, baking powder, and salt in the bowl of your food processor with the S-blade. Pulse the dry ingredients together. Drizzle in the canola oil and add the cottage cheese and pulse them into the dry ingredients. Add the starter/discard and pulse it in. Add the frozen spinach, onion powder, feta, and Parmesan and pulse them into the mixture until the mixture barely comes together. Some pieces won't adhere to the main ball. That's fine--don't over process the mixture. Dump the dough onto a lightly floured board or counter and pat it together into a large circle about 1/2-inch thick. Cut the circle into eight to ten wedges (depending on how big you want your scones). Cut small pieces of baking parchment to fit your air fryer basket. Put the wedges on the parchment, spacing them at least an inch apart. Air fry the scones at 335 degrees for 10-15 minutes. Let the finished scones sit on their parchment for a few minutes before removing them.
