These simple little breakfast puffs air fry in minutes. They are savory and sweet and are a variation of air fryer breakfast bakes I've made many times (check out the bananas foster version). The little puffs are reasonably nutritious with cottage cheese and quick oats included, and will help keep you fueled on a cold winter's day (or a hot one, for that matter). I use a Pyrex measure to mix up the batter, which saves washing extra dishes. I like breakfast, but I'm not keen on a major production, so these little puffs are great. They're fast to make, sweet, full of protein, and quite tasty! And if you don't have cherry pie filling, feel free to substitute apple, blueberry, or whatever you do have. Or just use a dollop of jam. It will work, too! Enjoy!
Air Fryer Cherry Breakfast Puffs -- Makes 2 Small Puffs
1/4 cup of cherry pie filling, divided
1/4 cup of cottage cheese
1 large egg
1/4 cup quick oats
2 teaspoons of sugar (optional)
1/2 teaspoon of vanilla
Dash of cinnamon, optional
Spritz 2 small ramekins with non-stick cooking spray and put about a tablespoon of cherry pie filling in the bottom of each one. In a small bowl or measure, combine the cottage cheese, egg, quick oats, sugar (if you want a sweeter puff--I don't usually add it) and vanilla and mix them well. Divide the mixture between the two ramekins, covering the cherry filling. On top of the mixture in each ramekin place another tablespoon or so of cherry pie filling. Dust the top of the cherry pie filling with a little cinnamon, if you'd like. Put the ramekins in the air fryer basket and set the temperature at 320 degrees. Cook the puffs for 10-15 minutes or until puffed and firm. Let the puffs stand a few minutes before serving them. You can serve the puffs in the ramekins or remove them carefully with a fork, keeping them upright and placing them on a plate.
