These scones are simple to make with your sourdough discard and air fry in about 10 minutes. Or you can bake the scones in a regular oven in about 15 minutes. The scones are full of orange flavor and get a bit of sweetness from some chopped dates--no refined sugar or artificial sweeteners. The ginger in the dough gives the scones a bit of warmth, along with a little sweet cinnamon. The scones, with whole-grains and plenty of fiber, are good if you're on a diabetic diet (in moderation, as always) or want to "eat healthy." We like the scones for a dinner or breakfast treat or with a slice of cheese for a nice, nutritious snack. Enjoy!

Sourdough Orange, Ginger, and Date Scones (Diabetic Friendly) -- Makes 8
1 cup of white whole-wheat flour
1/2 teaspoon of salt
2 1/4 teaspoons of baking powder
1 teaspoon of ground ginger
1/2 teaspoon of cinnamon
1/4 cup of quick oats
1/3 cup of canola oil
Grated zest of an orange
1 teaspoon of vanilla
1/2 teaspoon of butter extract (optional, but good)
1 cup of cold sourdough discard
1/2 cup of chopped dates
In a large bowl combine the white whole-wheat flour, salt, baking powder, ginger, cinnamon, and oats until well mixed. Add to the bowl the canola oil, orange zest, vanilla, butter extract, and sourdough discard and mix them (just use a sturdy spoon) into the dry ingredients until everything is blended. Stir in the chopped dates. Sprinkle the counter with a little flour and dump the mixture out onto the flour. Pat the mixture into a circle about an inch thick. Cut the dough into 12 wedges/triangles.
Air Fryer: Cut pieces of baking parchment to fit your air fryer basket. Place the dough triangles on the parchment, leaving an inch or two of space between the triangles. Air fry the triangles at 325 degrees for about 10 minutes or until a light golden brown.
Oven: Preheat the oven to 375 degrees. Line a baking sheet with baking parchment. Place the dough triangles on the parchment, leaving an inch or two of space between the triangles. Bake the triangles for 12-15 minutes or until a light golden brown.
