How to Make Quick and Easy Savory Cottage Cheese Egg Toasts or English Muffins in Your Air Fryer (Diabetic Friendly)

I didn't know what to call this, but it's good, inexpensive, quick to make, and nutritious. It's a piece of whole-grain toast--or in my case, a whole-wheat English muffin--topped with a mixture of cottage cheese, an egg, and cheddar cheese. It comes out of the air fryer crispy on top and soft and cheesy in the center. Think of a pizza, only without the tomato sauce and better for you. Although I use a whole-wheat English muffin to make the dish, other dense, whole-grain breads will work. I think rye bread, for example would make a great base for the topping. In moderation (of course!) the muffins are great if you're on a diabetic diet or want to "eat healthy." You'll only need 5-7 minutes to air fry the dish, so you can have it ready in about the time it takes to make your coffee. We like the toasts for breakfast, but I think they'd also make a nice lunch dish or even a light dinner with a side salad. Enjoy!

Cottage Cheese Egg Toasts -- Serves 1-2


2 whole-wheat English muffins, split and toasted lightly (or use 2 slices of other whole-

grain bread)

1/2 cup of low-fat cottage cheese

1 large egg

1/4 teaspoon of pepper

1/8 teaspoon of salt

1/4 teaspoon of onion powder

1/4 teaspoon of smoked paprika

1/4 cup of shredded cheese (I use sharp cheddar, but you can use what you have)


Spritz the cut sides of the toasted English muffins with a little olive oil or non-stick cooking spray and lay them, cut side up, in your air fryer basket. In a small bowl mix together well the cottage cheese, egg, pepper, salt, onion powder, smoked paprika, and cheese. Divide the mixture evenly among the muffin halves. Air fry the topped muffins at 360 degrees for 5-7 minutes or until the tops are bubbly and spotty brown. Let the muffins cool a little before eating them. They'll be hot!
