These salmon fillets cook in about 15 minutes in the air fryer and come out moist and delicious. The topping for the fillets is a mixture of sweet and savory ingredients and contrasts nicely with the rich fish. Chopped walnuts provide crunch and extra flavor. The dish is great if your diabetic or just want to "eat healthy," as it relies on fruit for sweetness and includes plenty of "healthy fats" as well as protein. We like the fish with a green vegetable, salad, and microwaved tiny potatoes or fast-cooking quinoa (it cooks in about 15 minutes, like the fish!) for a quick, nutritious, and tasty dinner. Enjoy!
Apple-Cinnamon Salmon Fillets -- Serves 2+
1/4 cup of chopped onion
3/4 cup of finely chopped apple (1 small to medium apple, cored and peeled or not)
1 tablespoon of butter
1/2 teaspoon of cinnamon
2 salmon fillets (about 12 ounces)
1/4 teaspoon of smokehouse maple seasoning (I use McCormick's)
2-4 tablespoons of chopped or broken walnuts
Put the onion and apple in a medium-sized bowl with a teaspoon or two of water and microwave them on high for a couple of minutes or until they soften a bit. Stir in the butter and cinnamon. Cut a piece of aluminum foil to fit in the bottom and an inch or two up the sides of your air fryer basket. Spritz the foil with non-stick cooking spray. Pat the fish dry with a paper towel and lay the fillets out, not touching, on the foil. Sprinkle the smokehouse maple seasoning on the fish. Divide the apple-cinnamon mixture between the two fillets, covering the tops of the fillets evenly. Sprinkle the walnuts over the tops of the fillets, pressing them into the apple mixture a little. Spritz the tops of the fillets with a little olive oil (or use non-stick cooking spray). Air fry the fillets at 360 degrees for about 15 minutes or to your desired degree of doneness. Let the fillets stand for a few minutes before serving them.
