These cookies are good! They are crunchy on the outside and soft in the inside. The cookies also are nutritious with loads of fiber, vitamins, and minerals. What the cookies lack is refined sugar. Instead, the cookies are sweetened with fruit, including bits of dried apricot, which add little hits of flavor throughout the cookies. Sometimes I use all apricots, and sometimes I use half apricots and half golden raisins--both are good! You won't need expensive eggs or butter to make the cookies. A little flax seed meal fills in for the eggs, and canola oil, which is low in saturated fat, replaces the butter. If you're on a diabetic diet or want to "eat healthy," the cookies are great (in moderation, as always). I usually make the cookies in the air fryer, which I think keeps the exteriors of the cookies crispier than the regular oven. If you want to bake the cookies in a regular oven, preheat the oven to 350 degrees, and bake the cookies for 10-15 minutes. We like the cookies for a simple dessert with coffee or tea, and the cookies also make a great, "healthy" after-school snack for kids with a glass of milk. Enjoy!
Air Fryer Fruit and Rye Cookies -- Makes 12
6 tablespoons of canola oil
1/2 cup of unsweetened applesauce
2 tablespoons of milk
2 tablespoons of milled flax seeds
1 teaspoon of vanilla
1 cup of rye flour (I use medium rye flour)
1/2 cup of rolled oats (I use "old fashioned")
1/2 teaspoon of baking power
1/2 teaspoon of baking soda
1/4 teaspoon of cinnamon
1/4 teaspoon of salt
1/2 cup of chopped, dried apricots, soaked for five minutes in hot water and drained
well (or use 1/4 cup of chopped apricots and 1/4 cup of golden raisins)
Cut small pieces of baking parchment to fit your air fryer basket and set them aside. In a large bowl combine the canola oil, applesauce, milk, milled flax seeds, and vanilla and mix them together well. Add to the bowl the rye flour, rolled oats, baking powder, baking soda, cinnamon, and salt and mix them in until combined. Fold in the dried apricots/raisins. Drop 12 scoops of dough (each scoop about 1 1/2 tablespoons) onto the prepared baking parchment, leaving an inch or two between the dough mounds. Flatten the cookies just a tiny bit with damp fingers. Air fry the cookies at 320 degrees for 10-12 minutes or until golden brown. Let the cookies cool on their baking parchment for a few minutes before removing them.
