How to Make Low Sugar Tropical Mango Cookies in Your Air Fryer (Diabetic Friendly, No Artificial Sweeteners)

These cookies are good! They are soft, lightly sweetened with mango puree and bananas--not refined sugar or artificial sweeteners--and they are definitely worth eating. Rich in protein and fiber, the cookies include buttery ground cashew nuts and oats and are acceptable (in moderation, of course) if you're on a diabetic diet or want to "eat healthy." A food processor is really useful for this recipe, as you'll need to grind cashew nuts, oats, and soaked dried mangoes. The recipe makes about nine cookies, and I like to make them in the air fryer. The cookies come out moist and tender and full of tropical flavor, especially when sprinkled with a bit of coconut before cooking. We like the cookies for a simple snack with tea or coffee. Enjoy!

Air Fryer Tropical Mango Cookies -- Makes 9


1 cup of ground cashew nuts (use the food processor)

1/2 cup of oat flour (grind regular or old fashioned oats in the food processor)

1/2 teaspoon of salt

1/4 teaspoon of baking powder

1/2 teaspoon of baking soda

1/2 teaspoon of ground allspice

1/2 cup of quick oats

1/4 cup of canola oil

1 large egg

1/3 cup of mango puree (just cover 1/3 cup of dried mango pieces in boiling water, let

the mixture sit until cool, and then puree the mango and any leftover water in the

food processor or a blender)

1 very ripe banana, mashed (about 1/2 cup)

1 teaspoon of lime juice

1 teaspoon of vanilla

2 - 4 tablespoons of unsweetened flaked coconut


In a large bowl mix together well the ground cashews, oat flour, salt, baking powder, baking soda, allspice, and quick oats. Add to the bowl the canola oil, egg, mango puree, mashed banana, lime, juice and vanilla and mix them into the dry ingredients until everything is blended. Loosely cover the bowl and let the mixture sit for at least 30 minutes. Cut small pieces of baking parchment to fit your air fryer basket. Stir the cookie mixture again and drop 2 1/2 - 3 tablespoon scoops of dough onto the prepared parchment. With damp hands or a spatula, flatten out the dough mounds until they are about 1/3 - 1/2-inch thick. Sprinkle a little coconut over the top of each dough mound, pressing it into the dough a little. Air fry the cookie dough at 320 degrees for about 10 minutes or until the cookies are golden brown and set. Let the cookies rest on their parchment for a few minutes before trying to remove them.
